Dulce de Leche is made from milk and sugar which you stir for several hours until it reaches the right consistency, colour and flavour. Caramel instead is made with water, whipping cream, butter and sugar. You also stir these ingredients over heat but not for as long as dulce de leche.
As you can see even though these are both caramels, they have different ingredients and that explains the change in colour, texture and flavour. If you haven’t tried Dulce de Leche I highly recommend you do. Some of the cakes that I make with Dulce de Leche are The Queen’s Arm (shown in picture), Dulce De Leche Cheesecake and the Naked Cake where each Vanilla Sponge layer is filled with a Dulce de Leche cream and a thin layer of raspberry coulis. The naked cake can be decorated with fresh flowers, berries or personalized to your needs.
