A conversation starter in itself, the zucchini cake is made from moist and fluffy zucchini and lime zest sponge, drizzled with a lime icing and scattered with chopped pistachios.
Cake: Flour/Gluten-free flour mix, sugar, free-range eggs, vegetable oil, grated zucchini, cardamom, baking powder, baking soda, lime zest, vanilla extract and salt.
Frosting: Unsalted butter, icing sugar and lime juice.
