It's all in the secret ingredient.
The trick to a deliciously moist and fluffy carrot sponge is to add just a little bit of crushed pineapple. In between three layers of sponge this cake has two layers of real cream cheese, which is subtly sweet.
Sponge: Flour, sugar, vegetable oil, eggs, carrot, crushed pineapple, baking powder, cinnamon, cardamom, nutmeg, baking soda and salt.
Icing: Cream cheese, butter, icing sugar and vanilla extract.
