Dulce de Leche Cheesecake

What caramel aspires to be.

Dulce de leche is made from milk and sugar which you stir for several hours until it reaches the right consistency, colour and flavour.  A South American favourite, this caramel-like flavour blends perfectly with baked cream cheese to create a creamy and smooth baked cheesecake that’s not too sweet, and that pairs perfectly with a ginger and Nice biscuit crumb.  And because there’s always room for more Dulce de leche, it’s finished off with a thin layer on top for good measure.

Base: Ginger nut biscuits, nice biscuits and butter.
Filling: Cream cheese, dulce de leche, thickened cream, eggs and cornflour.
