Everyone likes Pina Colada! 
 
This cake will bring back memories of summer days, long holidays and lazing by the pool, cocktail in hand. 
 
Fluffy vanilla sponge soaked in Malibu layered with crushed pineapple, coconut and mascarpone frosting.

Ingredients:

Sponge: Butter, sugar, eggs, flour/gluten-free flour mixture, sour cream, crushed pineapple, natural coconut extract, baking powder and baking soda.

Filling and syrup: Thickened cream, Mascarpone cheese, crushed pineapple, sugar, cornflour, coconut cream, pineapple juice and Malibu.
