Dulce de Leche vs Caramel

The difference between dulce de leche and caramel. Dulce de Leche is made from milk and sugar which you stir for several hours until it reaches the right consistency, colour and flavour. Caramel instead is made with just sugar. Another way to make caramel is to mix water, whipping cream, butter and sugar over heat.

Dulce de Leche Swiss RollAs you can see even though these are both caramels, they have different ingredients and that explains the change in colour, texture and flavour. If you haven’t tried Dulce de Leche I highly recommend you do.

Some of the cakes that I make with Dulce de Leche is the Dulce De Leche Cheesecake and the Vanilla Cake with Dulce de Leche where each Vanilla Sponge layer is filled with a Dulce de Leche and then covered with buttercream and finished off with a dulce de leche drip.
